Banana Bread
Ah banana bread. A true comfort food in my books. One time my friend was buying groceries online and accidentally bought 6 bunches of bananas instead of 6 individual bananas! You can imagine the amount of banana bread she ended up baking the following weekend.
Ingredients:
- 3 very ripe bananas, peeled 
- 1 large egg 
- 1 tsp vanilla extract 
- 1/3 cup melted coconut oil + coconut milk 
- 1/4 cup brown sugar 
- 1 1/2 cups all-purpose flour 
- 1/4 cup coconut flakes 
- 1 tsp baking soda 
- 1 tsp baking powder 
- Pinch of salt 
- Pinch of cinnamon 
- Chocolate chips (optional) 
- Chopped walnuts (optional) 
Method:
- Preheat the oven to 350°F and grease a 4x8-inch loaf pan. 
- In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Beat in the egg and vanilla extract. Add the melted coconut oil and milk and sugar. 
- Mix together the flour, coconut flakes, baking soda, baking powder, salt, and cinnamon. 
- Fold dry ingredients into wet ingredients until just combined. Add chocolate chips and walnuts if using. 
- Pour the batter into the prepared loaf pan. Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. Enjoy!
