Lemon Bars
These lemon bars are the perfect combination of sweet and tart. And the gooey filling is reminiscent of those lemon pudding cups we had as kids!
Ingredients:
- 1/2 cup butter 
- 1 cup all-purpose flour 
- 1/4 cup powdered sugar 
- 1 tsp vanilla 
- 1 cup granulated sugar 
- 1/2 cup fresh lemon juice 
- 3 eggs 
- 1/4 cup all-purpose flour 
- Powdered sugar for garnish 
Method:
- Preheat oven to 350°F and line a 8x8 baking pan with parchment paper. 
- Combine butter, flour, powdered sugar, and vanilla in a food processor until a dough starts to form. You may have to add ice water 1 tablespoon at a time in order for the dough to come together. 
- Press dough evenly into the bottom of the prepared pan. Bake 12-15 minutes or until edges are barely golden brown. 
- While crust bakes, make the lemon filling. Whisk sugar together with lemon juice, eggs, and flour. Once the crust is done baking, pour lemon filling over hot crust. 
- Bake 20 minutes or until set. Cool completely, cut into squares and top with powdered sugar.
